My FP6 is running LineageOS 23.
I can’t seem to find a way to configure “MOMENT”. I don’t know how to access the settings.

As I said I’m under LineageOS and there’s no "Fairphone Monment’ in the distro
That’s why @urs_lesse said “install” and gave you a link to F-Droid, where Fairphone was kind enough to release Moments to the public, so you could install it from there on your favourite Android OS.
You can install the F-Droid App and install Moments then with it, or you can just download the APK from the F-Droid website to your phone and install Moments this way (updating it is your responsibility then, though).

But it install MOMENT like a “classic” app… I mean I have to click on the icon to access it.
It’s not accessible withe the big yellow button !?

As you have seen yourself (probably, going by your username), /e/OS got it implemented.
If it’s not there in LineageOS, perhaps the LineageOS maintainer(s) for the Fairphone 6 could have a look at how /e/OS did it, time and priorities allowing, perhaps just ask them … [OFFICIAL] LineageOS 23 for The Fairphone (Gen. 6)
I have not tried this myself, but perhaps an app like “Button Mapper” allows to link the Switch button with launching a specific app (like “Fairphone Moments” here)? From a different context:
You can configure what the switch does in settings → system → buttons → additional buttons.
The fairphone moments app is unsupported as it was not open source when FP6 was brought up for LineageOS, and even now, it requires google services and implements tracking, thus it won’t be supported without modifications in the future either. Apart from that, they seem to have forgotten to push any updates to the app to github since 8 months, updated source code can be found on f-droid / althafvly’s fork.
