Brand new to Fairphone after having a Moto.
If I go into an App - for example there is one called “My Faorphone” I then can’t get out of it by using the back button. Is this a quirk of Fairphone?

This seems to be a special behaviour of the MyFairphone app. I can reproduce that with my FP4.
A handful of other apps I checked randomly don’t show this behaviour, i.e. the back button/gesture takes me to the home screen with those.
The back button is like the back button in a browser, it takes you back to the previous page/menu. It is not supposed to close apps by default. To manage running apps tap the recents-button (square) and swipe up on the app you want to close. If you just want to get back on the home screen, tap the home-button (circle).
On every other phone I’ve had, the back button gets you out of the app if you go back far enough.
In depends on the app, not the phone or it’s operation system. Many apps exit, some ask you to douple-tap to exist, some do not exit at all.
