After many years, my Fairphone started turning off randomly and restart, multiple times over the day, sometimes lasting a while others lasting few seconds and turning off again.
Thinking the problem was the battery, I bought a new one. Nope, same problem.
I also formatted it just in case, and same problem.
Any recommendation? Now it’s quite unusable, as it turns off randomly every few minutes. The problem persist also if the phone is plugged to the battery.

I’m experiencing exactly the same issues. My Fairphone is almost unusable since the last update (current version: 6.A.028.1). I’ve written to the support team. In case you haven’t done so, maybe it’s worth to submit another support request so that Fairphone finds out that this is a common problem, and hopefully does something to fix it.
I would think this is likely a problem with internal contacts, including those of the battery itself so I would advise you to start with those, they are easy to access without disassembling the whole phone. Turn off the phone, remove rear cover and battery. Clean the battery contacts AND those of the battery emplacement with a cotton bud soaked in surgical grade alcohol (90° available from chemists/pharmacies) or isopropanol. Leave to dry for an hour before replacing the battery.
If that doesn’t help, then remove all the modules so that you can clean all their contacts. Use the iFixit Teardown as a guide, but there’s probably no need to go beyond step 7.
Beyond that, we’re talking problems with solder micro-fissures, components etc. For that, I would advise getting in touch with a Fairphone Angel if there’s one nearby, who might be able to help track down your problem.
I’m experiencing the same behaviour but not so often. In my case it seems to be related to the usage of some apps e.g. reboots occur regularly when I’m using Google Maps for navigation
