With the latest OS 2.7 update, an app crashed while starting.
After deleting the app’s cache, user files and reinstalling older versions of it to no avail, while it works fine on Fairphone 3’s stock OS, I assume the error to come from the OS upgrade, and would like to downgrade to the previous version 2.6.3 whose image is available here /e/OS stable FP3 download .
However, neither a system update with this manually selected image, nor a side load in recovery mode worked, but always quickly failed with an unspecific error message.
Any hints on how to properly achieve this are highly appreciated.
I dont think you can downgrade with a locked bootloader and adb sideload and unlocking the bootloader means a factory reset and you coul not relock it.

Only started once on an FP4 with /e/OS 2.8. Most of the times it crashed or remained in some startup screen. So unfortunately it currently doesn’t seem to be stable on /e/OS

It’s a pity to hear that your favourite app does not work. I’ve done upgrades/downgrades and other shenanigans several times.
Your best bet is to reinstall the system via command line. It can be a bit overwhelming from the beginning but it’s few commands copy&pasted to terminal and the rest comes out by itself.
If I remember correctly, 2.6.3 was a bit buggy on my device. So maybe try to install 2.5 or older and upgrade to 2.6.3 instead of fresh install.
Also if you absolutely have to use graphical installer, it could be worth trying to purge /e/OS by installing LineageOS or Ubuntu Touch on your FP3, go through boot cycle and then installing /e/OS back on device. But I personally would go with manual installation first time.
Also skip locking your bootloader until you are sure that device boots properly don’t lock your bootloader
I can confirm that on /e/OS v2.8 aquamail still does not start on FP3.

It’s less a predilection than a necessity. Are there FOSS apps that sync mail and calendar with professional Exchange Web services and Outlook 365? I now tried Thunderbird, but while it reads the mail of Outlook 365 accounts where the admin registered this app, it does not add an account to sync the calendar data. EWS support is on the bottom of their todo list
As far as EWS goes, it is very unlikely you’ll find any good FOSS implementation just because EWS itself is proprietary.
My best try was sandboxing Outlook and not allowing it access to almost anything. But with this we are going offtopic imo
Sorry, I don’t have deep enough knowledge to explain differences between those. All I know is that by command line install you are manually overriding all partitions that the phone has (or at least they matter).
I spent some time helping with UbPorts debugging for FP3 and everytime something went wrong and nuked the installation, dirty but safe approach was to install android, verify it is working and then install UbPorts through command line. And because of that I did hop between several android versions back and forth ranging from Android 9 to 13.
I’m not Stallman, I have to use proprietary email servers to communicate. But maybe there’s something like Davmail to pipe these servers into a local one that can be connected to?
