I’ve got two system languages installed (en-US and nl-NL), because I prefer my phone in English but I also type in Dutch and I prefer having certain apps in Dutch because their English translations are off.
Since Android 15, this configuration causes the phone to seemingly randomly switch the system language from English to Dutch. Icons in the drawer are suddenly in Dutch (“Zaklamp” instead of “Flashlight”), the charging sentence on the lock screen is in Dutch and the unlock screen is as well.
I can’t pinpoint an exact trigger for the switching yet, it truly seems to happen randomly. Is this a known issue, is it being tracked somewhere?

Thank you for mentioning that. I have noticed only today that my FP5 started “talking” to me in French (that is the third language in my settings).
So far it has been only on lock screen without any regular pattern.
For me it would trigger when I used the Nova Launcher app, before I set it as my default launcher, so perhaps it’s also linked to a particular app in your case.
I ended up removing all the other languages from the system language setting (keyboard languages are separate), so I unfortunately don’t have a fix for it.
