touching the FP2 with my ear during a call, may result in unwanted actions like e.g. switching to flight mode - and such ending the call. Why is it not possible to switch the touch screen to inactive while the proximity switch has set the display to dark?
Is there a workaround? Or can we expect a software fix?
I’m sure the touch screen is inactive while the proximity switch has set the display to dark. Probably the display turns on while you are calling. This may happen when you have to recalibrate your proximity sensor.

As @Volker has already wrote you can re-calibrate the proximity sensor.
Therefore Fairphone has provided since Android 5.1 a tool which you can find going to settings->maintenance->proximity sensor.
Follow the instructions to re-calibrate the sensor.
Also try and test it specifically with an app if you want to make sure it’s basically working. You may e.g. use “Sensor Test” from the Play Store. But of course there are plenty of others available.
