I can’t open email attatchments anymore. I think it’s because of permissions for Files, but the permissions for gmail only lets me choose between “don’t allow” and “allow access for media only” (so not files). Am I right or is it some other issue? How do I fix this?

I use a different app for mail, but those are the permissions it has, and it manages attachments without problems.
You might try emptying the app’s cache, and if that doesn’t work, delete the app’s data. Before doing that, make sure those data are available elsewhere (no worry if you’re using IMAP which you likely are).
These are standard suggestions, others are made here, which is likely the best place to search for a gmail-specific problem.
