I have a Fairphone 3, and I bought the new camera modules. Now I should have a camera of 48MP but in the camera settings it only permits maximum 12MP. I don’t know if there’s to be an update of the app or something like that.

Your camera module is fully in order. It has an 48 MP sensor, but the output generated from this are 12 MP photos. See this topic for a previous discussion of this:
