Is it possible to assemble a working FP with display, camera, and microsd slot only?
I mean without any without any wireless connectivity at all?
No.
Wifi is in the main module and the phone won’t work without that.

You could build a faraday cage around it though.
I wonder how much connectivity would be left if you would disassemble only the antenna cable.

enough to make a connection. I am pretty sure. I had this issue disconnecting WiFi antenna on my laptop. It was able to see the network from 2m distance to WiFi Router.

Just try! Laptop network cards are a little different.
