Unfortunately my last phone died and decided it was time to go ethical, however coming from Galaxy S7 I feel like I’m in the 80’s. 
All you need is a different #launchers.

You could have a look at #lineageos for FP2, which is Android 8 right now.

My dad has a Galaxy S7 and I’d say it’s exactly the other way 'round, but I guess it’s just a matter of what you’re used to 
It occurs to me that maybe reducing screen DPI could make the UI feel less “bulky”. You can do that in every Android 5+, somewhere in the Settings (Display or Accesibility). Or you can further customize it via #dic:adb (search for the command and be careful).
