I have looked into the settings: The Google Assistant cannot be deactivated unless you deactivate the Google app completely. If you want to remove the Google app (and all the other Google stuff), install Fairphone Open OS.

Hello George

Go into setting, Scroll down to accessibility. At the top should say services in blue. Then click on talkback, you can the turn on or off. Plus back on accessibility page you can click on select to speak
