If I do a purchase worth 79€, having I 750 points shouldn’t I be able to get a 75€ off? Why does it just give me the option of 50€ off?

I currently have a few items in my shopping cart (cannot make up my mind whether to go through or not), and it gives me the option that you are missing:
My point total right now is 897 points.
If you have not done so yet, you might want to test it with a different browser. My screenshot is from Firefox 148.0.2 on MacOS 15.7.4 (actually I found Firefox rather error-prone when it came to the Fairphone Shop in the past). With some shop issues, I also found in the past that it helped to do as much as possible of the process before being logged in and only log in at the latest possible step.

I just did a test by adding something more expensive so I would get a total close to yours and now the 75€ off option appears…
Same browser (edge), same session/account, just different tab and side by side… This feels kinda deliberate but I don’t find on the Terms and Conditions anything that states that there is a limite of discount per total so this shouldn’t be happening?

Wild guess: Perhaps the discount must – for technical or legal or tax reasons – “fit” into the subtotal net before VAT ?
