No email / signal unread bubbles on app icons

Hi, Can somebody please explain to an Android noob how to turn on the green bubbles on the app icons like email or signal, that show the number of unread items? As far as I can tell, I have all notifications on, actually the ones for email are on and greyed out, so I can’t even turn them off (what does that mean?).

ok so I restarted the phone and now the bubbles are there again - kind of! They only show up for NEW emails, until I open the app ONCE.
Who invented this behaviour?? Do people really use it like that? I really don’t get it…
Can I get this phone somehow to show me all messages marked as unread??
And the same with signal messages etc? I can go into signal and mark a conversation as unread, but it won’t show outside the app… which kind of defeats the purpose for me.

The green bubbles on the app icons don’t AFAIK show your “unread items” (i.e. unread e-mails) but the notifications of the according app (the Android notification of the app in the notification bar, showing e.g. that you have new messages etc.).
So I think that the notification of the app disappears when you open the app, independently of the fact if you have unread mails (similar with signal messages etc.) or not.

Ok, if this is standard Android behaviour, I’m truly puzzled.
No device or OS I’ve had over the years worked like that.
But alright, I’ll deal with it

Not sure what would be so hard about implementing a button to have the user select what is the "normal way” in iOS, MacOS and Windows afaik. It would make switching to a Fairphone for many people much easier.
